Can someone explain how I can implement a (2000psi, 0.5 - 4.5v) brake line pressure sensor to increase regen in parallel to brake force, in the zombieverter.

Why complicate with pressure? You could use linear pot 5K to return 0V to 5V signal. You put this under your brake pedal together with brake switch.
Then you can program zombie with your selection of curve...

Zombie only does an on off brake sensor. There is no Analogue input for brake position thus regen request mapping.
Regen level change is only done on speed.
