We've just built a VW T2 with the SDU and open inverter and i'm impressed by the open inverter, although it's a bit more complicated than using the T2C, it's very good so hats off to the community, awesome stuff.
But one thing i'm curious about is the lowest voltages it can handle? what have people ...

On every step please attach the result of http://192.168.4.1/cmd?cmd=json as a text file
On your first post status was BrakeCheck which means you have to hit the brake pedal once to be able to start. Or disable cruisecontrol with cruisemode=Off
Amazing stuff, we've now got the motor spinning ...

Valid question. Those things you mentioned can already be viewed in Off-mode.
For a spin up test you can also set udcsw=0 and udcmin=0 and start the inverter with manualstart=On. Then test with the throttle
Ok, i've set udcsw / udcmin = 0 and manualstart = on and i can see POT moving correctly ...

There is no "protocol" you can map various parameters/spot values to the CAN bus. https://openinverter.org/wiki/CAN_communication
What BMS are you using? What "team" are you talking about a ECU/VCU?

Having recently purchased the open inverter boards for our SDU we're hoping to work with another team to have it controlled by CAN with ability to be shut off / derate with BMS if any issues occur
Could someone tell me how to find the CAN protocol for this?

Oh god, what a load of rubbish :)
I'd start by dropping fslipmax to 2 or 1.5 Hz and fslipmin to 1.5 Hz as well. Should already get you the reduction.
